Kalajamun
1 cup mawa/khoya mashed, 250 grams
1/2 cup + 1 teaspoon chena 125 grams, mashed or use grated paneer
1/2 cup all purpose flour 64 grams, maida
pinch baking soda
1/4 teaspoon cardamom powder
2 tablespoons finely chopped cashews optional, only if stuffing the jamuns
Sugar syrup
3 cups sugar 600 grams
4 cups water
4 teaspoons rose water 20 ml optional
2 teaspoons kewra water 10 ml optional
10 whole green cardamoms crushed
generous pinch saffron strands
2 teaspoons lemon juice 10 ml
How to prepare make kala jamun
- 1.Take paneer in a plate and crumble it finely, till soft & Mushy.
- 2. Now add maida, khoya and baking soda to it. Knead. Mix everything really well until soft and smooth. Now make small dough balls from the mixture.
Sugar Syrup
- In a vessel, take sugar and add water to it. Place it on flame to simmer until the sugar dissolves completely.
- Cook till sticky & cool down.
Stuff and fry the jamuns
- Heat enough ghee in a wok. Fry kala jamuns
- Rest the fried kala jamuns in sugar syrup for 2 to 3 hours.
